Shipping
Default shipment is by UPS unless otherwise arranged. It is our policy to ship orders only between November 1st to May 1st because of the warm weather. However we have the option to ship in small coolers for an extra charge. This charge is fully refundable should you choose to return the cooler back to us

 

Swiss

Category: firm cheese (pressed and cooked cheese, interior-ripened).
Appearance and texture: rindless; ivory to light yellow interior, bright; firm and supple texture, with very round openings ("eyes") distributed in the mass.
Aroma: light milk aroma, hazelnut accents
Taste: delicate taste of almond, reminiscent of Emmental but less pronounced.
Attributes: it melts and browns at high temperatures.

Bayrisher Bergsteiger Kase

Bayrisher Bergsteiger Kase was inspired by Liederkranz, a soft mellow limburger type cheese. Both have the delicate aroma of aged limburger, however it has the characteristic of a mild limburger.

Liederkranz was developed by a man name Emil Frey. Emil was commissioned by a very successful New York delicatessen owner to duplicate a popular german cheese called Bismark Schlosskase. He instead developed a new variety of limburger thus, Liederkranz was born. The name was later bought by Borden's and became available throughout the US. It wasoriginally made in Upstate New York State and then moved to Ohio. The plant closed in the late 1960s after a fire.

Liederkranz has copyrights attached to the name, and we have no idea why this cheese was never produced again.

Leo Kutter, operated a small limburger cheese factory for Hasselbeck Cheese Co. a division of Borden Foods in Buffalo NY. Hasselbeck went out of business when the second world war started because of severe milk shortages. At that time Leo Kutter started his own cheese factory. Several years ago Tony Kutter decided to develop a copy of this cheese to produce a mild limburger type of our own. It won a gold medal at the New York State fair in 2003. Here at Kutter's we call it Bayreisher Bergstiger Kase, or Bavarian Mountain Climbers Cheese.

Cheddar

Appearance and texture:
rindless, bright and smooth surface; light yellow or orange-coloured; firm, smooth texture and slightly elastic.
Aroma: flavor of butter.
Taste: taste of hazelnut which gets more complex with time.
Attributes: it melts and browns at high temperatures.
Varieties: mild (3 months); medium (from 4 to 9 months); sharp (from 9 months) extra sharp (2 years); extra extra sharp (3 years).

We are very proud of our 3 year old extra sharp cheddar because it is not available in any supermarket. This cheddar cheese when made is put away in the back forty of our storage cooler. We forget about it for 3 years. We then bring it out for our customers to savor the intense flavor and extra sharp tang. People stop at our store from far and wide to purchase this cheese, our best seller. Be sure to include it in your order!

rindless; very pale yellow to pale orangy colour; homogeneous, supple, flexible and soft texture.
Aroma:
very light hazelnut aroma.

taste slightly acidulous, mild, light taste of hazelnut.
Attributes:
it melts and browns at high temperatures.
Varieties:
made with whole milk, partially skimmed or skimmed milk; jalapeno peppers cooked or uncooked dishes, in cakes and pastries.

thin orangy crust, smooth colour; white to light yellow body colour; rather firm texture, without elasticity.

it melts and browns at high temperatures.
